Sometimes we get to try an established look but with a new twist. Ruffles are mostly done with fondant but most customers want to avoid it. We tried to accomplish the same look but with buttercream. I’m really happy with the outcome and learned a lot on this one cake. The sweet bride was willing to trust me without ever seeing what it would look like and I’m very grateful for her faith in my abilities.
I am starting to see a swing to more buttercream flowers and decorations and I am very happy about that! I hope this technique is a good start to a buttercream revolution.
We used Sugar Dress edible lace mix for the lace on the top tier. It’s so simple to make and stays very flexible. The gumpaste roses were hand painted in shades of violet and wine. The only other fondant was the pearl borders on the top two tiers. The base color of the buttercream was ivory and then airbrushed with pearl luster dust.
